VINIFICATION    Gentle pressing of the red -grape clusters, cryomaceration on the skin to extract fruit aromas and varietal characteristic of the Montepulciano grape, followed by static cold-settling of the must, then controlled-temperature(16/18°C) fermentation of the must.The wine is matured in steel, then aged in the bottle 2/3 months.


SENSORY PROFILE  The wine appers cherry pink, from which cerasuolo derives its name.The nose is striking for its rich, lingering array of impressions, which include strawberry, wild cherry, and wild red berryfruit, as well as sour cherry jam and rose petals.The palate is remarkable for its velvety texture, roundedness, and lengthy progression, as well as for the classic touch of almond on the finish.Its impressive structure and full character perfectly suit it for accompanying first courses, lighter meats, mixed boiled meats, and medium-aged cheeses.It is delicious with fish, particularly grilled and fish broth.The adventuresome will enjoy it with pizza.
